Protein Brownie Cookies | Vegan & Gluten-Free

NO FLOURS, NO GLUTEN/GRAINS, NO SUGAR!

I'm always looking to create something that not only has good quality healthy ingredients, but also can satisfy cravings! These may do all of that for me (and you). Having a protein powder that is versatile & tastes amazing is important for me. The new HEMP YEAH! by Manitoba Harvest is everything & more! It has 22g of plant based protein per serving, blends smoothly into liquid for smoothies & can be used in recipes!

Ingredients


1 ripe avocado

1/4 cup maple syrup

1 flax egg (1 tbsp of ground flax, 2 tbsp water, set aside for at least 2 min)

1/2 cup nut/seed butter (I used sunflower butter)

2/3 cup Cocoa Powder

2/3 cup Manitoba Harvest Hemp Yeah! Protein Powder

Optional: 1/4 cup dark chocolate chips, 1 tsp pure vanilla extract, 2 tbsp chopped nuts

Directions


Preheat oven to 350. Using a blender or food processor, whip until smooth avocado & maple syrup. Add the rest of the ingredients (not chocolate chips/nuts). Blend until a smooth batter forms. Transfer into a medium bowl. Fold in chocolate chips/nuts.

Line cookie sheet with a Sil-Pad or parchment paper. If using parchment paper, lightly coat with coconut oil. Prepare a mug of hot water. Using a cookie scoop or two spoons. Dip in hot water to help portion cookies. Using the back of a cleaned spoon, dip in hot water and smooth flat.

Bake for 12-15min. Cool completely. Store in an airtight container in fridge!
